Dedicated to Dad his favourite Haddock Chowder recipe!
As a family we have many nights in chatting and playing many old board games while chatting and laughing about previous times and memories; often about the people we have met and the places we have been, but we always end up remembering loved ones who made our lives what they are today and leave behind such a huge gap.
One of those is my Dad, who was a wonderful man who taught all of us to live life to the full, to enjoy adventure and good food while appreciating good friends and family. While in the kitchen this week we were talking about him and we all knew we had to cook one of his favourites Haddock and Leek Chowder.
You will need for this superb rich dish: 450g smoked haddock, 1 pint milk, 1 bay leaf, 50g butter, 1 medium onion, 2 to 3 leeks, 3 medium potatoes, 450ml fish or vegetable stock, 2 tsp lemon juice, 1 tblsp parsley, 25g plain flour and salt & pepper to taste.
Put haddock milk and bay leaf in large pan and bring to the boil before covering and simmer for 10 minutes, Lift fish out and flake the fish when cool. Seive the milk into a jug and save. Put 25g butter in pan when melted add chopped onion and leek and cook for 5 minutes then add the potatoes which have been peeled and diced and cover and simmer for 10 minutes. Now melt the rest of the butter in another pan stir in the flour and cook for 30 seconds take off the heat and gradually add the reserved milk before returning to the heat and bringing to the boil stirringthen simmer gently for 2 minutes. Now pour the milky mixture into the pan of leaks, potatoes and onion. Stir in the flaked fish, the lemon juice, parsley and season to your taste with salt and pepper. Leave to simmer gently for 5 minutes before serving with fresh home made bread.
This is one dish which is great on autumn nights when you need something warm and filling and always clean plates all a round the dining table, its the quietest my lot are anyway!

Italians take cuisine to another level with more italian recipes for you

Sophia Loren once said that ‘Everything you see, I owe to Spaghetti!’. Italians view their food as central to their life full of colour & variety, much like Italys variety of land terraine. The key to their cusine is the importance they put on quality basic ingredients to bring out flavour.
Take tomatoes they bring flavour to a variety of Italian dishes and Italian tomato varieties are exported all over the world aswell as being a important basic ingredient to Italian cookery and the Mediterranean diet. Olive oil used in dressings, for shallow frying or drizzled on pasta or bread is another staple for Italian cookery along with its health claims packed full with antioxidants and monounsaturated fats for reducing cholesterol.
I remember some facts picked up while visiting Italy and while chatting being told about Parma Ham which is cured for a minimum of 13 months and the longer the cure the sweeter and milder the flavour for example. They have a passion for food and life in general.
Why not make some homemade Focaccia to get in the Italian mood?
Your going to need: a 500g white bread mix, 3 tblsp olive oil, 5 sprigs of fresh rosemary and 4 finely sliced gloves of garlic.
Start by chopping the leaves of 4 of the rosemary sprigs (saving one sprig for decoration later) and emptying the bread mix into a bowl before stirring in the garlic and chopped rosemary. Then mix according to the bread packet mix directions and knead the dough for 5 minutes. Flatten your dough in to 2 oblongs each of about 1cm thickness and put these onto a lightly oiled baking sheet (oiled with olive oil). Don’t forget the great silicone baking sheets available now, if you haven’t tried them yet then what are you waiting for, they are great, easy to use, store and clean. Cover this loosely with a clean cloth and leave in a warm place for the dough to prove for at least 30 minutes when the dough should of doubled in size. Preheat your oven 220 c/ 425 f/ gas 7 and make dimples in your focaccia dough with your fingers before brushing with 2 tblsp olive oil and decorating with the remaining sprig of rosemary leaves and sprinkle with sea salt then bake for 15 minutes. Remove from the oven abd brush with the remaining olive oil before serving warm.
Note you can freeze this superb bread by double wrapping in greaseproof paper and foil before freezing until needed.

Italian-style baked red peppers

This recipe for Italian-style baked peppers is one of my family’s favourites from a old and dear family friend. “Oh dear!”, maybe I should of left the old off that?
Anyway, his fabulous Italian roots have taught me some fantastic Italian recipes to say the least over the years, and Italian food and wine are some of my personal favourites.
This recipe is lovely served as an accompaniment to white fish, grilled chicken, rich game sausages or just on their own!
For my Italian-style baked red peppers simply -
Halve and deseed 4 large red peppers and place them on your (silicone) baking sheet or dish (see my previous blog on 23rd July on Silicone bakewear), leave the stalks in place. Into each pepper half put cherry tomato, halved, 4 capers, 2 black oilives, pitted, 1 tblsp basil pesto and 25g camembert cut into chunky cubes. Drizzle the pepper halves with a little olive oil, some ground black pepper and a few torn basil leaves. The roast at 200 c/ 400 f / gas 6 for 30 minutes until the peppers are just starting to blacken around the edges. Simple serve them with sliced ciabatta bread cut thinly which you can use to soak up the lovely juices and a sharpe glass of Itailian Wine.

Best Birthday Greetings Breakfast!
I am sure many of us stop to think what can we do to make someone specials birthday that extra special. Well one very special person in my life like many of this is my Mum, like me Grandma she too believes in wholesome local and seasonal food as we were both taught to cook by her.
Wanting to make her birthday extra special we were looking to serve her a great birthday breakfast as a real treat.
Other breakfast recipes can be found in my previous blog ‘yogurt recipe depends on milk used’. You could also look at my previous blog ‘perfect omelettes’ too.
I knew exactly the breakfast Mum loves and headed for Red Hill Farm for fresh farm eggs straight from the field from their free range hens. Heading back Ed had already started to put together a tray fit for a queen together with a vase of flowers from the garden.
What were we preparing for this very special lady well one of her favourites scrambled eggs with smoked salmon. While Ed set about preparing his grandmother a cup of the best earl grey I got together the ingredients.
You will need: 4 Large free range eggs, pinch of cayenne pepper, 2 tsp butter, 2 small bunches of cherry tomatoes on the vine, 2 thick slices of homebaked bread, 50g fresh smoked scottish salmon cut into strips and fresh dill.
Start by preheating your grill and line your grill pan with foil. Place your beaten eggs, cayenne pepper and butter in a nonstick pan and cook on a low heat. Make sure you stir gently and constantly with a wooden spoon for about 10 minutes until the egg is softly set. While cooking your eggs, grill your vine cherry tomatoes for about 5 minutes until softened and they are starting to split. Toast your bread, butter and cut in half (like triangles). Placing 2 triangles of toast on a plate, then top with scrambled egg, pile on the smoked scottish salmon strips and snip some fresh dill over the top using scissors. Serve with you extra toast triangles and grilled tomatoes.
Putting together our tray complete with tea, toast, flowers & birthday breakfast, not forgetting the birthday cards we headed for the bedroom with a chorus of ‘Happy Birthday’. To say she was delighted and enjoyed her breakfast was a understatement she loved it.

Royal Ascot Food Frollicks
Great picnics start here, I have had (and aim to have many more too!) some fabulous times over the years attending Royal Ascot week. Let me tell you if you have never been the atmosphere is electric. Its one of those calendar events many of us wait for. Some of us spend months planning our outfits espically if your attending on Ladies Day which can be a right eye opener let me tell you. Everyone gets into the spirit with all the guys in full morning dress and every lady with her best hat addorned, its a day when fashion has no boundaries and that includes the picnic.
This picnic has a silk tablecloth and table, candles, even full barbecues, waiters and enough bubbly to sink the titanic. But it dosen’t stop with the highlights of the days horse racing and meeting the celebraties and royal family in the flesh as afterwards the picnics start, the music turned up and the partying truely begins.
I remember one year when we had been having alot of rain and the buses park a distance from the race course, they placed straw down for all of us to walk on and provided shoe cleaners to clean our shoes when we arrived at the race track, how funny to see people tottering around in shoes worth more than a family holiday in mud, dolled up to the eye balls, not forgetting the hat. The things we do hey!!
Tell me about your trips to ascot and the food you enjoyed, we took everything. Bubbly, crab, salmon, trifles no luxury was spared. Check out my previous picnic blogs like greatfood, great style and don’t forget the wine Take a look at the great picnic items available including blankets and hampers, I love this Spey De Luxe Hamper it has everything ready for you to go just grab this and your bubbly and food and your away. Some great pinic ideas include:
Salmon - Mix Salmon (fresh or tinned) with cannellini beans, chopped tomato, diced shallot, chopped black or green olives, chopped parsley and basil. Dress with olive oil and lemon juice; season with salt and pepper. Serve with bread or salad of your choice.
Trout - Combine a bunch of watercress or rocket with thinly sliced radishes and red onion; add flaked smoked trout. Dress at the last minute with olive oil, sherry vinegar, Dijon mustard, salt and pepper (which you pop in your picnic hamper!)
Local Lamb - One of my favourite is Local Lamb thinly sliced, then toss with cherry tomatoes, olive oil, mint, feta and chopped red onion, serve with a rustic bread and a beautiful rich red wine (Yummy!)

Quick Easy Asparagus Recipe
Asparagus will soon be disappearing from our shelves (well the British Variety will anyway!) The asparagus season goes from April to mid June, but you can still enjoy this marvellous vegetable, if your quick.
When choosing your asparagus make sure you go for the firm asparagus with good colour, not wilted tops etc. You can simply cut off the woody ends and scrap this end with a knive, before you simply saute in a little butter and black pepper, delicious or why not try my Asparagus & Mushroom Fusilli, again simple to make and one of my sons favourites, so it has to be easy to prepare and cook!
You will need 300g Fusilli Pasta ( or use your homemade pasta as shown in my blog homemade pasta ), 25g Butter, 2 cm piece root ginger - grated, 125g mushrooms -sliced, 2 100g bunches of asparagus, 250ml tub half fat creme fraiche, 1 tbsp freshly chopped flat leaf parsley & salt and pepper to season.
First you will need to cook your pasta in a large pan of boiling slated water for about 10 minutes, (less time if fresh), while this is cooking melt your butter in a large pan and fry the ginger. mushrooms and asparagus (which you have prepared and cut on the diagonal into pieces) for about 5 minutes until cooked. Now add the creme fraiche, parsley and then seasoning to your taste. Drain your now cooked pasta
I found this great gadget for making draining pasta easy after I watched my mother in despair try to drain pasta using a saucpan lid only to feed the sink with some of this delicious homemade pasta as it slipped her clutches so to avoid this try using this great pasta spaghetti vegetable boiler colander drainer basket it is made of wireware, this stainless steel spaghetti, pasta vegetable basket is ideal for boiling and easily draining pasta or vegetables, for either domestic or commercial use.
Now mix into your sauce before serving immediately with either a salad or crusty homemade bread and a glass of cool white wine.

Traditional Soda Bread Recipe
Round loaves of soda bread were traditionally baked on a hot griddle over a open fire, so they had a lovely crisp crust. This bread is great for anyone who cannot eat yeast for whatever reason. The bread is moist, close textured and delicious!
To make your soda bread your going to need: 450g Wholemeal plain flour (see my previous blog on flours to get the low down on different types and there uses), 1 tsp bicarbonate of soda, 125g Plain white flour, 1 tsp salt, 50g rolled oats and 450ml buttermilk.
Put the flours, oats, bicarbonate of soda & salt in a large bowl & mix together. Add enough buttermilk to mix to a soft dough. Knead very lightly, then shape into a large round & place on a greased baking sheet, then cut a deep cross in the top. Bake in the oven at 230 c/ 450 f/ gas 8 for 15 minutes then reduce the oven temperature to 200 c/ 400 f/ gas 6 and bake for a further 20 to 25 minutes or until the loaf sounds hollow when tapped on the bottom. Then enjoy your loaf and eat while warm.
These great silicone all purpose baking sheets are brilliant for all your baking needs, I personally love the silicone range of bakeware and everyone who trys them has got rid of the cupboards of tin bakeware we all use to keep. They are easy clean and never get hot and whats more they store better in your cupboards too with alot of the cake tins etc actually folding completely flat.
